"I was fortunate to find and work with Toni and Hugh while putting together the Shania Twain tour in Europe in 2003. We were so knocked out by their great food and the care with which they looked after us, Shania decided on the spot to take them with us on the entire tour including the United States and Canada. It was a match made in heaven. When it was time for the Eagles tour of Europe in 2009 it was simply a no-brainer to ask Toni, Hugh and Upbeat to come along. My experience of Upbeat on the UK leg of the Metallica tour was that they were great to deal with on the advance and a real pleasure to work with on the road. The food was amazing and constantly surprising. If you want straightforward food in the right sized portions at the right times then there are many tour caterers you can choose from. What impressed me about Toni and her team in particular was the level of imagination and creativity they brought to doing this and the little things they did that make a long day easier, such as the incredible home-made biscuits with my mid-morning cuppa!

I have recently written and published a book about a key point in the history of New Zealand food where the drab foods of the colonial times where replaced by fine foods in the European tradition.
A key part of the production was testing the archive recipes and then their presentation for tasting and photography. Hugh and Toni did this.
I believe the book would not exist without their assistance.
Another great ability they possess is no matter the situation, outdoor kitchen, limited water supply etc etc, no matter what the demand and how exhausted they are the glorious food arrives.
I absolutely reccomend them, their food and their care.
